Middle Monkey asked for greens tonight. Here is how we do it.
Greens - Swiss chard and collards today, a bunch, more that you think you need. This stuff reduces down to nothing.
1 clove minced garlic
2 tablespoons olive oil
1/2 cup chicken broth
1 teaspoon balsamic vinegar
Saute the garlic in the olive oil over medium heat. While the garlic is sauteing, remove the stalks and chop the greens. Add the greens to the oil and garlic and wilt. Add the chicken broth to the pot and reduce. When almost all of the liquid is gone, remove the greens from the heat and add the vinegar. Watch as Middle Monkey eats it all and doesn't share.
Greens cutting technique - Cut out the stalks. Roll the leaves up all together. Slice the rolled up greens the long way, don't let go. Now cut the greens the short way across the length of the rolled up greens. Ta-da, Perfectly cut up greens very fast. Hope this made some sort of sense. I'm tired. Never mind, I went and had Baby Monkey take some pictures that will show you. Sorry about that last picture.

ReplyDeleteHow wonderful the monkey likes greens! Only 2 out of 7 grand daughters do. Hubby could eat them everyday and I will try this- with out the garlic though. At our age garlic doesn't agree with us. :) Tell baby monkey he did a great job of taking pictures and thanks for the tutorial on greens cutting.
ReplyDeleteBeckie, Middle Monkey is the only one who eats greens cooked. The other two will eat them raw. I know, weird.
ReplyDeleteGreat recipe and cutting technique! I make spinach like this (minus the chicken broth) and you're right, it's amazing how three huge bags cook down to two servings! (I hate to think how much it takes to make a bag of frozen spinach!) Love vinegar and salt on spinach, too! (And I too eat kale and mustard greens raw in salad. They're great!)---Silence
ReplyDeleteYou are so lucky that the monkeys are open to a variety of veggies. My youngest likes most things except for sweet potatoes, weird huh? :) Now my eldest is completely opposite, very picky! lol
ReplyDeleteYou are such a good mama to your three monkeys. You take the word "maternal" to a new level, making sure your boys will like greens. And eat nutritiously. Many grow into men that hate anything green. Isn't that strange? Aliens?

I want to try that recipe with bok choy: I already love Swiss chard anyway, and I want to try something new with the bok choy and other Asian greens. (Middle Monkey has the right idea: these are all really good eating.)
ReplyDeleteYou're makin' me hungry already!! My mama used to wilt greens early in the season and slice little radishes up paper thin and add them to the greens as they wilted. The radishes gave a crunch and added a slightly peppery flavor... yum!

Nola, we have radishes too. Maybe I will try that tonight. After I made the comment that Middle Monkey was the only one who would eat them cooked, Baby Monkey insisted that we make him some too.
Hmmm, no mac'n'cheese or mashed potatoes?! Yowee zowie! Must be a texture thing---maybe you should add some greens to those puppies, too, or bury 'em under a mound of barbecue. I think I'll try the radish thing in our next batch of spinach too.--Silence
ReplyDeleteSilence, it has to be. He has never eaten them even when he was a baby. I think Nola's suggestion about the radishes is a great idea. Can't wait to try it.

ReplyDeleteMy boy won't touch potatoes (unless they are french fries) or any kind of pasta, and I'm convinced it is a texture issue.
