Eggs, They are Everywhere

It happens every year. We have a lot of decorated boiled eggs. I made egg salad for dinner tonight, but that is going to get old fast. I like Scotch eggs. So I will make a few of those tomorrow. I am going to try to pickle a few, but then what?

Anybody have any great ideas?

  1. My sister in law told of an unusual recipe she had found called "Egg Casserole". I can't remember exactly but it involved about six eggs, a white sauce, a tin of cream of mushroom soup, cheese and breadcrumbs. My MIL said it was good.

    I am always faced with using up eggs. We do curried egg sandwiches, egg, mayo, curry powder and lettuce. Stuffed eggs? Take out the yolks and mash them up with perhaps mustard, worcestershire or similar then put them back in the egg whites for a snack. Something we love is Russian Eggs. I slice hardboiled eggs and top with good mayonnaise and caviar. That's a special occasion one though.

  2. Too bad you don't have a dog like we did when I was young. We'd go out and hide the hard-boiled eggs to do an Easter egg hunt and if we forgot that she was outside, we come back out to perform said hunt and find that the "egg sucking dog" had found a large portion of them, eaten them, and left shells around the yard as evidence. Yup. You need an "egg sucking" dog.

    Cindy, I never thought about offering the eggs to Abby. Yet, I am just a little afraid of the poisonous dog gas that might produce;)

  4. Don't forget to slice them on tossed salads, Debbi! You should be able to use up at least three per salad that way. I like the idea of curried egg sandwiches, too (and of course deviled eggs). Are you making the pickled beet eggs? Those are good, too, and you can make a huge jar of them. Think I could bribe you into posting your egg salad recipe again?

  5. What on earth are Scotch eggs? Haven't heard of them. If I know your monkeys, you will be finding eggs in all sorts of unusual places...

  6. Well, I have an extreme measure, but I guarantee that it works. You know that I used to have a four-foot savannah monitor that would do just about anything for a hard-boiled egg, right? The neighbors wouldn't have any issues with you keeping a four-foot carnivorous lizard in the neighborhood, right? (Yep, I'm ducking and running.)

  12. Hey! After I read Foxy's comment, I did an internet search and found this recipe that will use 8 hardboiled eggs!
    Cheesy Egg Casserole

    Recipe By : Aunt Joan
    Serving Size : 1 Preparation Time :1:00
    Categories : Aunt Joan's Casseroles

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    8 large hard boiled eggs -- sliced
    4 slices buttered toast
    1 pound frozen broccoli (or use fresh)
    12 ounces Velveeta Cheese
    1/2 pint sour cream

    Cook broccoli just til tender and drain. Heat cheese and sour cream til melted.
    Do not boil. In casserole, put toast points made from 2 slices of toast, a
    layer of broccoli and 4 hard-boiled eggs. Repeat layers. Pour cheese sauce
    over top and heat in 350 degree oven for 20 minutes

  14. Lisa that sounds so good. We don't get Velveeta but I think bottled cream cheese spread would work.

    I tried to search for my SIL's recipe but couldn't find it anywhere.
